Apple Sauce Muffins

These moist, fluffy muffins are a lovely way to start your day. Filled with apple pie spices, they pair perfectly with a morning cup of tea or as a snack on the go.

Apple Sauce Muffins

Ingredients

  • 1 3/4 cups all-purpose flour 
  • 1 tbsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/8 tsp nutmeg
  • 1/2 cup salted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3/4 cup unsweetened apple sauce

Directions

  1. Preheat oven to 425°F.
  2. Combine flour, baking powder, cinnamon, ginger, salt and nutmeg in a bowl. Set aside.
  3. Using medium speed of an electric mixer, beat together butter and sugar until fluffy. Using low speed, beat in eggs and apple sauce until blended.
  4. Add flour mixture to apple sauce mixture and stir just until combined.
  5. Spoon batter into paper-lined or greased muffin cups, filling cups three-quarters full.
  6. Bake until a cake tester inserted in centres comes out clean, about 15 - 17 minutes. Cool muffins in pans for 5 minutes. Remove from pans and cool on racks. May be frozen for up to 1 month.
