Apple Sauce Muffins
Ingredients
- 1 3/4 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1/8 tsp nutmeg
- 1/2 cup salted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 3/4 cup unsweetened apple sauce
Directions
- Preheat oven to 425°F.
- Combine flour, baking powder, cinnamon, ginger, salt and nutmeg in a bowl. Set aside.
- Using medium speed of an electric mixer, beat together butter and sugar until fluffy. Using low speed, beat in eggs and apple sauce until blended.
- Add flour mixture to apple sauce mixture and stir just until combined.
- Spoon batter into paper-lined or greased muffin cups, filling cups three-quarters full.
- Bake until a cake tester inserted in centres comes out clean, about 15 - 17 minutes. Cool muffins in pans for 5 minutes. Remove from pans and cool on racks. May be frozen for up to 1 month.
