ASPARAGUS AND HAM TARTS
Ingredients
10 burrito-style flour tortillas (10 inch/25 cm)
Canola oil
1 cup thinly sliced asparagus
1/3 cup finely chopped cooked ham
1 round brie cheese
4 large eggs
1/4 cup light sour cream
Dash hot pepper sauce
Directions
Preheat oven to 350° F.
Cut four 2 1/2 inch squares out of each tortilla. Lightly brush one side of each square with oil. Press each square, oiled side down, into a greased mini muffin cup to make a ruffled tart shell.
Combine asparagus and ham; spoon mixture into tart shells.
Cut brie into 40 cubes, each about 3/8 inch. Place 1 cube in each tart shell.
Whisk together eggs, sour cream and hot pepper sauce until blended. Spoon about 1 1/2 tsp of egg mixture into each tart shell.
Bake until set, about 20 minutes. May be frozen for up to 3 weeks.
