ATHENIAN GREEN SALAD
Give your Greek salad ingredients a lift with a zesty yogurt buttermilk dressing flavoured with dill and fresh mint.

ATHENIAN GREEN SALAD
Ingredients
- 3/4 cup yogurt
- 1/4 cup buttermilk
- 1 tbsp fresh lemon juice
- 1/2 tsp mint, crumbled
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp dill weed
- 1 clove garlic, crushed
- 8 cups torn romaine lettuce
- 2 cups shredded red cabbage
- 1 cup sliced cucumber
- 3/4 cup diced red bell pepper
- 1/2 cup sliced green onions
- 1/2 cup freshly grated Parmesan cheese
- 1 tomato, cut into thin wedges
Directions
- To prepare dressing, whisk together yogurt, buttermilk, lemon juice, mint, salt pepper, dill and garlic until blended. Dressing may be refrigerated for up to 24 hours.
- Combine remaining ingredients in a bowl. Toss with dressing to coat. Serve immediately.
