BANANA OAT BRAN MUFFINS
Ingredients
1 1/2 cups oat bran
1 cup flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp baking soda
1/8 tsp nutmeg
3/4 cup mashed ripe bananas
1/2 cup milk (2%)
1/4 cup liquid honey
1 large egg
2 tbsp canola oil
1 tsp vanilla
1/2 cup raisins
Directions
Preheat oven to 400°F.
Combine oat bran, flour, baking powder, salt, cinnamon, baking soda, and nutmeg in a bowl; set aside.
Whisk together bananas, milk, honey, egg, oil and vanilla until blended. Add banana mixture to oat bran mixture and stir just until combined. Fold in raisins.
Spoon batter into paper-lined muffin cups, filling cups three-quarters full.
Bake at 400°F until a cake tester inserted in centres comes out clean, about 15 - 17 minutes. Cool muffins in pan for 5 minutes.
Remove from pan and cool on a rack. May be frozen for up to 1 month.
