Yield: Serves 4

Barbecue Pizza Subs

Ingredients

  • 1 tbsp canola oil
  • 3/4 lb (0.375 kg) lean ground beef
  • 1/2 cup chopped onion
  • 1 can (7 1/2 oz/213 mL) pizza sauce
  • 1/2 tsp dried basil, crumbled
  • 1/2 tsp dried oregano, crumbled
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper
  • 4 torpedo rolls
  • 1 cup shredded mozzarella cheese

Directions

  1. Place a 10 inch cast iron frypan on natural gas barbecue grid. Heat frypan over medium heat for 10 minutes.
  2. Heat 1 tbsp oil in frypan on barbecue grid. Add beef and onion. Cook, stirring to break up beef, until browned, about 7 - 10 minutes. Drain off excess fat.
  3. Stir in pizza sauce, basil, oregano, salt and pepper. Cook, stirring occasionally, for 5 minutes.
  4. Meanwhile, slice top 1/2 inch from each roll. Set tops aside. Hollow out rolls to within 1/2 inch of bottom and sides. Discard bread centres or reserve for another use.
  5. Sprinkle 3 tbsp of cheese into each roll. Spoon meat mixture into rolls, dividing equally. Sprinkle with remaining cheese. Replace tops of rolls. Wrap rolls individually in foil.
  6. Heat rolls over low heat directly on barbecue grid until cheese is melted and rolls are heated through, about 20 minutes.
