BASIL CHICKEN WITH PEACH AND APPLE SALSA
This fresh and flavourful chicken recipe makes for a great weeknight barbecued dinner. The accompanying salsa is a great way to take advantage of summertime peaches or nectarines.

BASIL CHICKEN WITH PEACH AND APPLE SALSA
Ingredients
- 3 tbsp oil
- 2 tbsp dry white wine
- 2 tbsp lime juice
- 1 tbsp Worcestershire sauce
- 1 1/2 tsp basil, crumbled
- 4 boneless skinless chicken breasts
- Peach and Apple Salsa
Directions
- To prepare marinade, combine oil, wine, lime juice, Worcestershire sauce and basil in a heavy zip-lock plastic bag. Add chicken and squeeze bag to coat chicken with marinade; seal bag and place on a plate. Refrigerate, turning bag occasionally, for 4 hours or overnight.
- Remove chicken from marinade; discard marinade. Grill chicken over medium heat on natural gas barbecue for 12 - 15 minutes or until chicken is cooked through. Serve with Peach and Apple Salsa.

PEACH AND APPLE SALSA
Ingredients
- 1 small apple, peeled, cored and diced
- 2 peaches or nectarines, peeled and diced
- 2 tbsp chopped fresh cilantro
- 1 tbsp honey
- 1/4 tsp allspice
- 1/4 tsp cinnamon
Yield: Makes about 1 1/2 cups.
Directions
- Combine all ingredients. Cover and refrigerate for up to 4 hours.
