BEER AND CHEDDAR CORNBREAD
Ingredients
- 1 cup flour
- 3/4 cup cornmeal
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup shredded cheddar cheese
- 1/2 cup beer
- 1/2 cup water
- 1/4 cup butter, melted
- 2 eggs
- 2 tbsp honey
- 1/2 tsp hot pepper sauce
- 1/3 cup shredded cheddar cheese
Directions
- Combine flour, cornmeal, baking powder and salt in a bowl. Stir in 1/2 cup cheese.
- Whisk together next 6 ingredients (beer through hot pepper sauce) until blended.
- Add beer mixture to flour mixture and stir just until combined.
- Spoon batter into a greased 9 inch square baking pan. Sprinkle cheese over top.
- Bake at 400ºF for 20 minutes or until a cake tester inserted in centre comes out clean. Serve warm.
