Ingredients
- 1 cup quick-cooking rolled oats
- 1 cup vanilla yogurt, divided
- 1 cup chopped dried mixed fruit (cranberries, apricots, raisins and prunes)
- 1/2 cup sliced natural almonds, toasted
- 3 tbsp honey
- 1 tbsp lemon juice
- 1/4 tsp cinnamon
- Additional vanilla yogurt, optional
Directions
- Combine rolled oats and 1/2 cup yogurt. Stir in dried fruit, almonds, honey, lemon juice and cinnamon. Cover and chill at least 1 hour or for up to 4 hours.
- Stir in remaining 1/2 cup yogurt. Spoon into serving dishes. Top with a dollop of vanilla yogurt.
