Blackberry and Rosemary Clafoutis
Ingredients
- 2/3 cup milk (2%)
- 2 large eggs
- 1/3 cup all-purpose flour
- 3 tbsp granulated sugar
- 1/2 tsp almond extract
- 1/8 tsp salt
- 1 cup blackberries
- 2 tbsp granulated sugar
- 1 tsp finely chopped fresh rosemary
- Whipped cream*
Directions
- Preheat oven to 400°F.
- To prepare batter, place milk, eggs, flour, 3 tbsp sugar, almond extract and salt in a blender; blend until smooth.
- Pour batter into a greased 8 inch round baking pan. Place blackberries on top of batter. Sprinkle 2 tbsp sugar and rosemary over batter.
- Bake until puffed and light golden, about 35 minutes.
- Let stand for 15 minutes before slicing.
- Serve warm with a dollop of whipped cream.
