BOMBAY SALMON

Give your grilled salmon some Indian flavour with a spiced yogurt sauce. All of the spices are easy to find in a typical grocery store and in combination they resemble a mild curry powder.

Yield: Serves 6.

BOMBAY SALMON

Ingredients

  • 1/4 cup plain yogurt
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground coriander
  • 1/2 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 lb (1 kg) salmon fillet

Directions

  1. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  2. Combine all ingredients except salmon. Place salmon, skin side down, on a piece of heavy-duty foil. Trim foil so it is slightly larger than fillet. Spread yogurt mixture over salmon.
  3. With lid down, cook salmon until fish flakes easily with a fork, about 10 - 12 minutes per inch of thickness.
