BUFFALO CHICKEN SALAD

If you crave Buffalo chicken wings and want a healthier way to get the same flavour, this dish is for you. With grilled hot sauce marinated chicken, lettuce, apple and blue cheese dressing, this salad is substantial enough to serve as an entrée.

BUFFALO CHICKEN SALAD

Ingredients

  • 1 tbsp extra-virgin olive oil
  • 2 tsp hot pepper sauce
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 4 boneless skinless chicken breasts
  • 8 cups torn romaine lettuce
  • 1 1/2 cups sliced celery
  • 1 red apple, cored and cubed

Directions

  1. To prepare marinade, combine oil, hot pepper sauce, cayenne, salt and pepper in a heavy zip-lock plastic bag. Add chicken and squeeze bag to coat chicken with marinade; seal bag. Let stand 30 minutes.
  2. Preheat natural gas barbecue on medium heat for 15 minutes. Meanwhile, remove chicken from marinade; discard marinade.
  3. Grill chicken over medium heat on natural gas barbecue until chicken is cooked through, about 12 - 15 minutes.
  4. Cool chicken 5 minutes; cut diagonally into slices. Combine chicken, lettuce, celery and apple. Toss with Blue Cheese Dressing.

BLUE CHEESE DRESSING

Ingredients

  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp milk (2%)
  • 1 tsp fresh lemon juice
  • 1/4 tsp freshly ground pepper
  • 1/2 cup crumbled blue cheese

Yield: Makes about 1 1/2 cups.

Directions

  1. In a small bowl, combine sour cream, mayonnaise, milk, lemon juice and pepper. Stir in blue cheese. Cover and refrigerate until serving.
