CARIBBEAN YAMS

Root vegetables like yams, sweet potatoes and yuca are staples of Caribbean cooking. These yams are coated with a sweet and citrusy sauce before grilling.

CARIBBEAN YAMS

Ingredients

  • 1/4 cup packed golden brown sugar
  • 2 tbsp salted butter, melted
  • 1 tbsp chopped fresh cilantro
  • 1 tsp ground ginger
  • 1 tsp fancy molasses
  • 1 tsp pineapple juice or lime juice
  • 1/4 tsp vanilla
  • 4 cups sliced peeled yams (1/4 inch/6 mm)
  • 2 tbsp canola oil

Directions

  1. Combine brown sugar, butter, cilantro, ginger, molasses, pineapple juice, and vanilla in a small bowl; set aside.
  2. Preheat natural gas barbecue on low heat for 10 - 15 minutes.
  3. Combine yams and oil in a heavy plastic bag. Squeeze bag to coat yams with oil. Remove yams from bag.
  4. Place yams on a grill topper or directly on barbecue grid. Grill yams over low heat on natural gas barbecue, turning over occasionally, until tender, about 10 - 15 minutes.
  5. Transfer to a serving dish. Drizzle brown sugar mixture over yams and toss to coat.
