Cast Iron Seared Halibut

We added a smokey lemon flavour to this mild-tasting white fish and cooked it to perfection on the barbecue. Serve with your favourite salad or rice dish to make a quick weekday meal on a busy summer night.

Cast Iron Seared Halibut

Ingredients

  • 4 halibut fillets (about 7 oz/200 g each)
  • 1 tbsp canola oil
  • 1 1/2 tsp salt
  • 2 tbsp salted butter, softened
  • 1/4 cup fresh lemon juice

Directions

  1. Place a 10 inch cast iron frypan on barbecue grid on natural gas barbecue. Heat frypan over high heat for 15 minutes.
  2. Brush both sides of halibut fillets with oil. Sprinkle with salt. 3. Turn barbecue control down to low heat.
  3. Place halibut in frypan on barbecue grid and sear, with lid down, for 5 minutes. Flip halibut over.
  4. Add butter and stir until butter is melted. Add lemon juice and cook, basting halibut frequently with cooking liquid, until fish flakes easily with a fork, about 1 minute. Remove from heat.
  5. Serve drizzled with cooking liquid.
