CHILI ORANGE PEANUTS
These peanuts are the perfect snack for when you’re craving something that’s sweet, salty and spicy.

CHILI ORANGE PEANUTS
Ingredients
- 1/4 cup granulated sugar
- 1 1/2 tsp grated orange peel
- 1 tsp kosher salt
- 1/4 cup honey
- 2 tbsp water
- 1 1/2 tsp sambal oelek
- 3 cups unsalted roasted blanched peanuts
Directions
- Preheat oven to 250°F. Line a rimmed baking sheet with parchment paper.
- Combine sugar, orange peel and salt in a large heatproof bowl; set aside.
- Combine honey, water and sambal oelek in a large nonstick frypan. Cook over medium heat, swirling occasionally and watching carefully to prevent burning, until mixture is slightly thickened and most of water has evaporated.
- Add peanuts and cook, stirring, until peanuts are coated with honey mixture, about 4 minutes.
- Transfer peanuts to sugar mixture in bowl and toss to coat. Spread peanuts in a single layer on prepared pan.
- Bake for 15 – 20 minutes or until peanuts are lightly browned and richly glazed.
- Cool completely in pan on a rack, breaking into clusters as peanuts cool. Store in an airtight container in a cool dry place for up to 1 week.

Tip: Sambal oelek is a chili paste mixture used in Malaysian and Indonesian cooking. Look for it in the Asian section of grocery stores.
