CHOCOLATE CHIP BANANA MUFFINS
Chocolate and bananas are a classic combo. These tasty muffins make a great portable snack.

CHOCOLATE CHIP BANANA MUFFINS
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp ground ginger
- 1/4 tsp salt
- Pinch nutmeg
- 1 cup mashed ripe bananas
- 1/2 cup granulated sugar
- 1/2 cup salted butter, melted
- 1/4 cup milk (2%)
- 1 large egg
- 1 tsp vanilla
- 3/4 cup mini semi-sweet chocolate chips
Directions
- Preheat oven to 350°F.
- Combine flour, baking powder, ginger, salt and nutmeg in a bowl.
- Stir together bananas, sugar, melted butter, milk, egg and vanilla until blended.
- Add banana mixture to flour mixture and stir just until combined. Fold in chocolate chips.
- Spoon batter into paper-lined muffin cups, filling cups three-quarters full.
- Bake at 350°F for 30 - 35 minutes or until a cake tester inserted in centres comes out clean.
- Cool muffins in pan for 5 minutes. Remove from pan and cool on a rack. May be frozen for up to 1 month
