Beets are plentiful in Alberta during the fall harvest season and well into the winter months. These roasted beets are brightened up with orange and fresh herbs.

CITRUS ROASTED ALBERTA BEETS
Ingredients
2 lb beets, tops and roots removed
2 tbsp canola oil
1 tsp salt, divided
3/4 tsp freshly ground pepper, divided
1/3 cup fresh orange juice
3 tbsp chopped fresh Italian parsley
3 tbsp roughly chopped fresh chives
1 1/2 tsp grated orange peel
Directions
Preheat oven to 450°F.
Toss beets with oil, ½ tsp salt and ½ tsp pepper in a large bowl.
Wrap beets tightly in foil and bake until tender when pierced with a fork, about 1 – 2 hours. Baking time may vary depending on beet size. Unwrap beets and cool.
Peel and quarter beets when they are cool enough to handle. Toss with remaining ingredients in a medium bowl.
