CITRUS ROASTED ALBERTA BEETS
Ingredients
- 2 lb beets, tops and roots removed
- 2 tbsp canola oil
- 1 tsp salt, divided
- 3/4 tsp freshly ground pepper, divided
- 1/3 cup fresh orange juice
- 3 tbsp chopped fresh Italian parsley
- 3 tbsp roughly chopped fresh chives
- 1 1/2 tsp grated orange peel
Directions
- Preheat oven to 450°F.
- Toss beets with oil, ½ tsp salt and ½ tsp pepper in a large bowl.
- Wrap beets tightly in foil and bake until tender when pierced with a fork, about 1 – 2 hours. Baking time may vary depending on beet size. Unwrap beets and cool.
- Peel and quarter beets when they are cool enough to handle. Toss with remaining ingredients in a medium bowl.
