Classic Meat Loaf with Roasted Tomato Ketchup

Meat loaf is an iconic family favourite. This classic dish oozes comfort, no matter where you are. Homemade Roasted Tomato Ketchup is the perfect condiment to top it all off.

Classic Meat Loaf with Roasted Tomato Ketchup

Ingredients

  • 1 cup roughly chopped carrots
  • 1 cup roughly chopped celery
  • 1 cup roughly chopped yellow onion
  • 3 cloves garlic
  • 1 cup fine dry bread crumbs
  • 1 large egg
  • 1 tbsp fresh Italian parsley
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme, crumbled
  • 2 lb (1 kg) lean ground beef
  • 1 lb (0.5 kg) ground pork
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • ½ cup Roasted Tomato Ketchup

Directions

  1. Preheat oven to 375°F. Spray two 9x5 inch loaf pans with cooking spray.
  2. Combine carrots, celery, onion and garlic in a food processor; purée until almost smooth. Add bread crumbs, egg, parsley, Dijon mustard and thyme. Process to combine.
  3. Add beef, pork, bread crumb mixture, salt and pepper to an electric mixer bowl. Mix with the paddle attachment on low speed. Alternatively, mix by hand in a large bowl until well combined.
  4. Transfer meatloaf mixture evenly into loaf pans. Push down into bottoms and corners. Spread tops of loaves with Roasted Tomato Ketchup. Cover pans with foil and bake until an internal temperature of 180°F is achieved, about 1 – 1¼ hours. Cool in pans for 10 minutes.

When cooled, one of these meatloaves can be tightly wrapped and frozen. To reheat, preheat your oven to 375 F and bake from frozen until heated through, about 1 1/2 hours.
