CRANBERRY APPLE CRISP
Ingredients
- 1 cup all-purpose flour
- 3/4 cup quick-cooking rolled oats
- 2/3 cup firmly packed brown sugar
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chilled salted butter, cubed
- 7 cups thinly sliced peeled Golden Delicious apples
- 2 cups fresh or frozen cranberries
- 1/3 cup maple-flavoured pancake syrup
- 2 tbsp firmly packed brown sugar
- 2 tbsp all-purpose flour
- 1 tsp vanilla
- 1 tsp grated lemon or orange peel
- Vanilla ice cream*
Directions
- To prepare crumb mixture, combine 1 cup flour, oats, 2/3 cup brown sugar, cinnamon and salt in a bowl.
- Using fingertips, rub in butter until mixture is crumbly. Crumb mixture may be prepared and refrigerated for up to 24 hours.
- Preheat oven to 350°F. Meanwhile, combine apples, cranberries, pancake syrup, 2 tbsp brown sugar, 2 tbsp flour, vanilla and lemon peel, and spoon into a greased shallow 3 quart (3 L) baking dish.
- Sprinkle crumb mixture over top. Bake at 350°F for 55 - 60 minutes or until golden brown and juices are thick and bubbly. Serve warm with ice cream.
