CRISPY HONEY LIME CHICKEN
Ingredients
- 2 tbsp honey
- 1 tbsp fresh lime juice
- 1 tsp grated lime peel
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 1/8 tsp cayenne pepper
- 1/8 tsp cinnamon
- 2 cups soft fresh bread crumbs
- 1/4 cup chopped fresh parsley
- 1 tbsp canola oil
- 4 boneless skinless chicken breasts
Directions
- Preheat oven to 425°F. Grease a 9x13 inch baking pan or line with non-stick foil.
- Combine honey, lime juice, lime peel, chili powder, ground cumin, salt, pepper, cayenne and cinnamon in a pie plate; set aside.
- Combine bread crumbs, parsley and oil in a separate pie plate.
- Working with one piece at a time, dip chicken into honey mixture, turning to coat both sides. Place chicken in bread crumb mixture, pressing lightly so that crumbs adhere; turn to coat both sides. Place chicken in a single layer in prepared pan.
- Bake, uncovered, until chicken is cooked through and coating is golden brown, about 25 - 30 minutes.
