CRISPY ZUCCHINI SPEARS
These crispy zucchini spears are baked rather than fried for a healthier version of the popular pub appetizer. The breading is a tasty mix of Parmesan cheese, cornmeal and spices.

CRISPY ZUCCHINI SPEARS
Ingredients
- 2 medium zucchini
- 1/4 cup cornmeal
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp oregano, crumbled
- 1/4 tsp paprika
- 1 large egg, beaten
Directions
- Preheat oven to 450°F.
- Cut each zucchini in half and slice into spears.
- Combine cornmeal, flour, Parmesan, garlic powder, salt, oregano and paprika.
- Dip zucchini spears in egg and then in cornmeal mixture. Place spears on a greased baking sheet. Bake at 450°F for 15 - 20 minutes.
