CRUNCHY MADRAS DIP

This creamy curried dip gets some crunch from the addition of chopped cucumber, celery and green onions. Serve it with crackers, baguette slices or raw vegetables.

Yield: Makes 2 cups.

CRUNCHY MADRAS DIP

Ingredients

  • 4 oz (125 g) cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tsp fresh lemon juice
  • 1 tsp curry powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp turmeric
  • 1/3 cup finely chopped celery
  • 1/3 cup finely chopped seeded English cucumber
  • 2 tbsp finely chopped green onion

Directions

  1. Using medium speed of an electric mixer, beat together cream cheese, sour cream, mayonnaise, lemon juice, curry powder,cumin, salt and turmeric until smooth.
  2. Stir in celery, cucumber and onion until blended. Transfer to a serving dish.
  3. Cover and refrigerate for at least 2 hours or up to 2 days. Serve with raw vegetables.
