CRUNCHY MADRAS DIP
This creamy curried dip gets some crunch from the addition of chopped cucumber, celery and green onions. Serve it with crackers, baguette slices or raw vegetables.
Yield: Makes 2 cups.

CRUNCHY MADRAS DIP
Ingredients
- 4 oz (125 g) cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tsp fresh lemon juice
- 1 tsp curry powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp turmeric
- 1/3 cup finely chopped celery
- 1/3 cup finely chopped seeded English cucumber
- 2 tbsp finely chopped green onion
Directions
- Using medium speed of an electric mixer, beat together cream cheese, sour cream, mayonnaise, lemon juice, curry powder,cumin, salt and turmeric until smooth.
- Stir in celery, cucumber and onion until blended. Transfer to a serving dish.
- Cover and refrigerate for at least 2 hours or up to 2 days. Serve with raw vegetables.
