Crustless Smoked Salmon Quiche Squares

Quiche with smoked salmon the perfect combination for any brunch!

Yield: Serves 6 - 8

Crustless Smoked Salmon Quiche Squares

Ingredients

  • 5 eggs
  • 1/4 cup light sour cream
  • 1 tsp Dijon mustard
  • 1 tsp dill weed
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp salt
  • 1 1/4 cups light cream (10%)
  • 1 pkg (85 g) smoked salmon, chopped
  • 1/2 cup thinly sliced green onions
  • 1/2 cup shredded Swiss cheese

Directions

  1. Whisk together first 6 ingredients (eggs through salt) until blended. Whisk in cream. Stir in salmon, green onions and cheese.
  2. Pour mixture into a greased 8 inch (20 cm) square baking dish. Bake at 350ºF (180ºC) for 35 - 40 minutes or until a knife inserted in centre comes out clean. Let stand for 5 minutes. Cut into squares and serve.
