CUCUMBER AND MELON SALAD

This fresh and juicy salad is the perfect start to dinner on a hot summer day. Combine cool cucumbers and honeydew melon with sesame seeds and a sweet and spicy Asian-inspired dressing.

CUCUMBER AND MELON SALAD

Ingredients

  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp grated fresh ginger
  • 1 1/2 tsp packed golden brown sugar
  • 1/4 tsp red pepper flakes
  • 1/8 tsp salt
  • 1/4 cup canola oil
  • 1 tsp sesame oil
  • 3 cups cubed honeydew melon (3/4 inch)
  • 2 1/2 cups thinly sliced cucumber
  • 1/4 cup thinly sliced green onion
  • 1 tbsp sesame seeds, toasted

Directions

  1. To prepare dressing, whisk together rice vinegar, soy sauce, ginger, brown sugar, red pepper flakes and salt until combined.
  2. Gradually whisk in oil and sesame oil until blended.
  3. Combine melon, cucumber and green onion in a bowl.
  4. Add dressing and toss to combine. Sprinkle with sesame seeds. Serve immediately.
