CUCUMBER AND MELON SALAD
This fresh and juicy salad is the perfect start to dinner on a hot summer day. Combine cool cucumbers and honeydew melon with sesame seeds and a sweet and spicy Asian-inspired dressing.

CUCUMBER AND MELON SALAD
Ingredients
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp grated fresh ginger
- 1 1/2 tsp packed golden brown sugar
- 1/4 tsp red pepper flakes
- 1/8 tsp salt
- 1/4 cup canola oil
- 1 tsp sesame oil
- 3 cups cubed honeydew melon (3/4 inch)
- 2 1/2 cups thinly sliced cucumber
- 1/4 cup thinly sliced green onion
- 1 tbsp sesame seeds, toasted
Directions
- To prepare dressing, whisk together rice vinegar, soy sauce, ginger, brown sugar, red pepper flakes and salt until combined.
- Gradually whisk in oil and sesame oil until blended.
- Combine melon, cucumber and green onion in a bowl.
- Add dressing and toss to combine. Sprinkle with sesame seeds. Serve immediately.
