CUCUMBER SALAD
Ingredients
1/4 cup granulated sugar
2 tbsp rice vinegar
2 tbsp finely chopped fresh mint
3 cups julienned English cucumber
1/2 cup thinly sliced green onions
1/2 cup finely chopped fresh cilantro
Directions
To prepare dressing, whisk together sugar, vinegar and mint until blended.
Combine English cucumber, green onions and cilantro in a bowl.
Add dressing and toss to combine. May be refrigerated for up to 30 minutes
