CUMIN VINAIGRETTE
This easy vinaigrette is flavoured with Dijon mustard and the distinctive taste of cumin. Use it to dress a mixed green salad. The cumin goes particularly well with cucumber and fresh orange slices if you want to throw some in with the greens.
Yield: Makes 1 1/4 cup.

CUMIN VINAIGRETTE
Ingredients
- 1 tbsp minced onion
- 1/2 tsp Dijon mustard
- 3/4 tsp cumin
- 1/4 tsp salt
- 1/3 cup fresh lemon juice
- 3/4 cup extra-virgin olive oil
Directions
- Whisk together onion, mustard, cumin, salt and lemon juice.
- Whisking continually, add oil in a thin stream until blended. Vinaigrette may be refrigerated for up to 4 days.
