Delicate Lemon Squares

These easy and delicious lemon squares have a buttery cookie crust and delicate lemon filling. This recipe can be easily doubled so is the perfect spring or summer dessert for a special occasion or to bring to a picnic.

Storage Time: Refrigerate up to 4 days or freeze up to 1 month

Delicate Lemon Squares

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup icing sugar
  • 1/2 cup salted butter, softened
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 cup fresh lemon juice
  • Zest of one lemon (optional)*
  • 2 large eggs, lightly beaten
  • Icing sugar*

Directions

  1. Pre-heat oven to 350°F.
  2. Line an 8 inch square baking pan with nonstick foil, leaving a 2 inch overhang.
  3. To prepare crust, combine 1 cup flour, 1/4 cup icing sugar and butter in a bowl. Blend until mixture is crumbly. Press mixture into prepared pan.
  4. Bake until lightly golden brown, about 15 minutes.
  5. Meanwhile, to prepare filling, combine sugar, 2 tbsp flour and baking powder. Whisk in lemon juice, zest and eggs until blended.
  6. Remove pan from oven and immediately pour filling over hot crust.
  7. Return pan to oven and continue to bake until filling is set and light golden brown, about 25 minutes.
  8. Cool completely in pan on a rack. Dust with icing sugar.
  9. Using foil as an aid, lift from pan and cut into squares. Remove squares from foil. Store in an airtight container in refrigerator for up to 4 days. May be frozen up to 1 month.
