DOUBLE CHOCOLATE ZUCCHINI LOAF

Shredded zucchini lends moisture to this chocolate chip-studded cocoa quick bread.

Yield: Makes 2 loaves.

DOUBLE CHOCOLATE ZUCCHINI LOAF

Ingredients

  • ​2 cups shredded zucchini
  • 1 cup liquid honey
  • 1 cup canola oil
  • 3 large eggs
  • 2 tsp vanilla
  • 2 cups all-purpose flour
  • 3/4 cup packed golden brown sugar
  • 1 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup milk chocolate chips
  • 1 cup slivered almonds, unsalted

Directions

  1. Preheat oven to 350°F. Spray two 9x5 inch loaf pans with cooking spray and line with parchment paper.
  2. Combine zucchini, honey, oil, eggs and vanilla in a medium bowl.
  3. Combine flour, sugar, cocoa, baking powder, salt, cinnamon and nutmeg in a large bowl.
  4. Add the wet ingredients to the dry ingredients. Stir just until combined. Fold in chocolate chips and almonds. Do not overmix.
  5. Pour batter evenly into pans. Bake on the middle rack for 55 – 65 minutes or until a cake tester inserted in centres comes out clean.
