Shredded zucchini lends moisture to this chocolate chip-studded cocoa quick bread.

DOUBLE CHOCOLATE ZUCCHINI LOAF
Ingredients
- 2 cups shredded zucchini
- 1 cup liquid honey
- 1 cup canola oil
- 3 large eggs
- 2 tsp vanilla
- 2 cups all-purpose flour
- 3/4 cup packed golden brown sugar
- 1 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup milk chocolate chips
- 1 cup slivered almonds, unsalted
Directions
- Preheat oven to 350°F. Spray two 9x5 inch loaf pans with cooking spray and line with parchment paper.
- Combine zucchini, honey, oil, eggs and vanilla in a medium bowl.
- Combine flour, sugar, cocoa, baking powder, salt, cinnamon and nutmeg in a large bowl.
- Add the wet ingredients to the dry ingredients. Stir just until combined. Fold in chocolate chips and almonds. Do not overmix.
- Pour batter evenly into pans. Bake on the middle rack for 55 – 65 minutes or until a cake tester inserted in centres comes out clean.
