FLOURLESS BLACK BEAN BROWNIES
Don’t let all these healthy ingredients fool you — these brownies are a fudgy and decadent-tasting dessert. Serve them to guests who adhere to a gluten-free or reduced refined sugar diet.

FLOURLESS BLACK BEAN BROWNIES WITH YOGURT CREAM CHEESE FROSTING
Ingredients
- 1 can (14 oz/398 mL) black beans, rinsed and drained
- 1 cup unsweetened pumpkin purée
- 1/2 cup liquid honey
- 2 large eggs
- 2 tsp vanilla
- 1 cup cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup dark chocolate chips
- Yogurt Cream Cheese Frosting
Directions
- Preheat oven to 350°F. Spray a 9x9 inch pan with cooking spray and line with parchment paper.
- Add beans, pumpkin, honey, eggs and vanilla to a food processor. Purée on high until smooth, about 1 minute.
- Combine cocoa, baking soda and salt in a medium bowl. Add dry ingredients to the wet ingredients. Process for 30 seconds. Add chocolate chips and pulse until combined.
- Spread batter into pan. Bake for 25 – 30 minutes or until a cake tester inserted in centre comes out clean. Cool completely in pan. Remove from pan and spread with icing before cutting.

YOGURT CREAM CHEESE FROSTING
Ingredients
- 1 cup cream cheese, softened
- 1/4 cup plain Greek yogurt
- 2 tbsp liquid honey
- 2 tsp vanilla extract
- Pinch of salt
Yield: Makes about 1 3/4 cups.
Directions
- Beat cream cheese with an electric mixer until light and fluffy, about 1 minute. Add yogurt, honey, vanilla and salt. Continue beating until smooth and creamy, about 1 – 2 minutes.
