FOIL PACKET POTATOES

There’s no easier way to do baby potatoes on the barbecue! Throw a foil package of oiled and herbed ‘taters on the grill for a tender and perfectly browned side dish.

Yield: Serves 4.

FOIL PACKET POTATOES

Ingredients

  • 6 cups baby yellow-fleshed potatoes
  • 3 tbsp salted butter, cubed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 4 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 3 cloves garlic, crushed
  • 2 bay leaves
  • 1 shallot, quartered

Directions

  1. Preheat oven to 325°F.
  2. Combine all ingredients in a bowl. Place potato mixture in centre of a large double piece of foil. Quickly bring edges of foil together to form a packet; close all edges with tight double folds. Place packet on a rimmed baking sheet. Bake until potatoes are tender, about 1 hour. Cut open package. Remove and discard thyme, rosemary, garlic and bay leaves. Transfer potato mixture to a serving dish.
