FOIL PACKET POTATOES
Ingredients
6 cups baby yellow-fleshed potatoes
3 tbsp salted butter, cubed
2 tbsp olive oil
1/2 tsp salt
1/2 tsp freshly ground pepper
4 sprigs fresh thyme
3 sprigs fresh rosemary
3 cloves garlic, crushed
2 bay leaves
1 shallot, quartered
Directions
Preheat oven to 325°F.
Combine all ingredients in a bowl. Place potato mixture in centre of a large double piece of foil. Quickly bring edges of foil together to form a packet; close all edges with tight double folds. Place packet on a rimmed baking sheet. Bake until potatoes are tender, about 1 hour. Cut open package. Remove and discard thyme, rosemary, garlic and bay leaves. Transfer potato mixture to a serving dish.
