Freezer Breakfast Sandwiches

These delicious and nutritious sausage and egg sandwiches are the perfect make-ahead breakfast for those busy mornings on the go.  

Yield: 12 sandwiches

Freezer Breakfast Sandwiches

Ingredients

  • 227 g spreadable cream cheese
  • 12 toasted English muffins
  • 12 pieces Bake Omelette Squares (recipe follows)
  • 12 cooked and cooled Turkey Sausage Patties (recipe follows)

Directions

  1. Spread about 2 tsp cream cheese on cut sides of each English muffin.
  2. Top 12 English muffin halves with Omelet Squares and sausage patties. Cover with remaining English muffin halves.
  3. Wrap sandwiches in parchment paper and freeze. Once fully frozen, transfer to a freezer container. May be frozen for up to 1 month.
  4. To serve, defrost sandwiches overnight in the refrigerator and reheat in the microwave until piping hot, about 3 minutes. Alternatively, frozen sandwiches may be reheated, wrapped in foil, in a 350°F oven for 1 hour.

Baked Omeltte Squares

Ingredients

  • 12 large eggs
  • 1/2 cup milk (2%)
  • 1 tsp garlic powder
  • 1 tsp freshly ground pepper
  • 1 tsp salt
  • 1/2 tsp hot pepper sauce
  • 2 cups shredded cheddar cheese
  • 1/4 cup sliced green onions

Yield: Makes 12 squares

Directions

  1. Preheat oven to 375°F.
  2. In a large bowl, whisk together eggs, milk, garlic, pepper, salt and pepper sauce. Pour egg mixture into a greased 9x13 inch baking pan.
  3. Bake eggs until set, about 20-25 minutes. Sprinkle cheese and onions on eggs halfway through cooking.
  4. Remove pan from oven and let stand for 15 minutes. Cut into 12 squares. May be frozen for up to 1 month.

Tip: Two 500g cartons of liquid egg product can be used in place of the eggs in this recipe.
Turkey Sausage Patties

Ingredients

  • 2 lbs ground turkey
  • 2 tsp dried sage, crumbled
  • 1 tsp dried thyme, crumbled
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp -freshly ground pepper

Yield: Makes 12 patties

Directions

  1. Preheat oven to 375°F.
  2. Combine all ingredients in a large bowl until well blended.
  3. Shape mixture into 2 inch balls. Place on foil-lined baking sheet; flatten balls into patties 4 inches in diameter.
  4. Bake until fully cooked, about 15 minutes. Remove from oven and cool completely.
  5. Cooked patties may be frozen for up to 2 months. If freezing, layer patties with wax paper in an airtight container.
