GARLIC ROASTED POTATOES

These garlicky herbed potatoes are the perfect side dish to go with roast or barbecued meats.

GARLIC ROASTED POTATOES

Ingredients

  • 2 lb (1 kg) small potatoes
  • 2 tbsp olive oil
  • 4 cloves garlic, chopped
  • 1 tbsp rosemary, crumbled
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper

Directions

  1. Preheat oven to 425°F.
  2. Combine all ingredients and toss until potatoes are thoroughly coated with seasonings. Place potatoes in a single layer in a greased shallow baking dish. Roast until potatoes are tender and lightly browned, about 50 minutes.
