GINGERBREAD BUNDT CAKE WITH ORANGE GLAZE

This is the perfect holiday dessert, without being too fussy. The cake itself is a moist and spicy gingerbread and it’s decorated simply with a sweet orange glaze.

Yield: Serves 10.

GINGERBREAD BUNDT CAKE WITH ORANGE GLAZE

Ingredients

  • ​2 1/2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 cup salted butter, softened
  • 1/2 cup packed dark brown sugar
  • 1 tbsp grated fresh ginger
  • 1 tbsp grated orange peel
  • 3/4 cup fancy molasses
  • 1 large egg
  • 1 cup hot water
  • Orange Glaze*

Directions

  1. Preheat oven to 350ºF.
  2. Sift flour, baking soda, cinnamon, ground ginger and cloves into a bowl; set aside.
  3. Using medium speed of an electric mixer, beat together butter, brown sugar, fresh ginger and orange peel until fluffy. Add molasses and egg; continue beating until blended.
  4. Stir in flour mixture just until combined. Add hot water and stir just until blended.
  5. Pour batter into a greased and floured 9 cup Bundt pan.
  6. Bake until a cake tester inserted in centre comes out clean, about 40 minutes.
  7. Cool in pan on a rack for 10 minutes.
  8. Invert cake onto rack and cool completely.
  9. Place cake on a serving plate. Drizzle Orange Glaze over top, allowing glaze to run down sides of cake.

Orange Glaze

Ingredients

  • ​1 1/2 cups icing sugar
  • 3 tbsp fresh orange juice
  • 1/2 tsp grated orange peel
  • 1/2 tsp vanilla

Yield: Makes 2/3 cup.

  1. Stir together all ingredients until smooth.
