GRAPE AND BLUE CHEESE SALAD
Tangy blue cheese and sweet red grapes complement each other beautifully. The two come together in this green side salad.

GRAPE AND BLUE CHEESE SALAD
Ingredients
- 2 tbsp red wine vinegar
- 2 tbsp fresh lemon juice
- 1 tbsp honey
- 2 tsp Dijon mustard
- 1/4 tsp freshly ground pepper
- 1/8 tsp salt
- 1/2 cup olive oil
- 2 cups thinly sliced red onions
- 12 cups torn mixed greens
- 2 cups halved seedless red grapes
- 1/2 cup crumbled blue cheese
Directions
- To prepare dressing, whisk together vinegar, lemon juice, honey, mustard, pepper and salt until combined. Gradually whisk in oil until blended. Pour dressing into a heavy zip-lock plastic bag. Add onions to bag and squeeze bag to coat onions with dressing; seal bag and place on a plate. Refrigerate, turning bag occasionally, for at least 4 hours or up to 8 hours.
- Remove onions from dressing; reserve dressing. Combine onions, greens and grapes in a bowl. Add dressing and toss to coat. Place salad on individual serving plates. Sprinkle each serving with cheese. Serve immediately.
