Greens with Light Creamy Caesar Dressing
Ingredients
- 1 cup light mayonnaise
- 1/4 cup freshly grated Parmesan cheese
- 3 tbsp milk
- 1 tbsp lemon juice
- 1/2 - 1 tsp anchovy paste
- 1 glove garlic, crushed
- 1/4 tsp pepper
- Torn romaine lettuce
- Croutons
- Freshly grated Parmesan cheese
Directions
- Combine first 7 ingredients, mayonnaise through pepper in a blender or food processor.
- Serve with lettuce, croutons and additional Parmesan cheese.
- Dressing may be refrigerated for up to 48 hours.
