GREMOLATA POTATOES
Gremolata is a blend of herbs and olive oil, commonly used in Italian cooking. We use it with red potatoes in this easy barbecued side dish.

GREMOLATA POTATOES
Ingredients
- 8 cups cubed red potatoes
- 2 tbsp olive oil
- 6 cloves garlic, finely chopped
- 1 tbsp grated lemon peel
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- 1/4 tsp paprika
- 2 tbsp finely chopped fresh parsley
Directions
- Preheat natural gar barbecue on medium heat for 10 - 15 minutes.
- Combine all ingredients except parsley. Place potato mixture in center of a large piece of foil. Bring edges of foil together to form a packet; close all edges with tight double folds. Cook, turning packet occasionally, for 50 - 60 minutes. Open packet and sprinkle potatoes with parsley.
