Grilled Corn and Smoked Gouda Salad with Honey Lemon Dressing

This recipe is everything that summer represents: Fresh, smoky and subtly sweet! The peppery arugula and smoked Gouda are nice change-ups and put this salad in a league of its own.

 

Yield: Makes about 12 cups.

Grilled Corn and Smoked Gouda Salad with Honey Lemon Dressing

Ingredients

  • ½ cup fresh lemon juice
  • ¼ cup canola oil
  • 3 tbsp liquid honey
  • 1 tsp salt
  • ½ tsp freshly ground pepper
  • 6 cobs of corn, husked
  • 1 tbsp canola oil
  • 8 cups arugula
  • 3½ cups diced red bell peppers
  • 2 cups diced red onions
  • 1 cup toasted sunflower seeds
  • ½ cup shredded smoked Gouda cheese

Directions

  1. Preheat a natural gas barbecue to medium heat.
  2. To make dressing, whisk lemon juice, ¼ cup oil, honey, salt and pepper together in a small bowl; set aside.
  3. Lightly brush corn with 1 tbsp oil. Grill over medium heat, turning occasionally, until lightly browned, about 15 – 20 minutes. When cool enough to handle, cut corn kernels from cob using a sharp knife. There should be about 4 cups.
  4. Combine corn kernels with remaining salad ingredients in a large bowl. Add dressing and toss to combine.
