GRILLED LIME AND CHIPOTLE CHICKEN
These barbecued chicken drumsticks are marinated in a blend of lime juice, honey and canned chipotle peppers.

GRILLED LIME AND CHIPOTLE CHICKEN
Ingredients
- 1/4 cup fresh lime juice
- 1/4 cup canola oil
- 1 tbsp chopped canned chipotle peppers in adobo sauce
- 2 tsp honey
- 1/2 tsp grated lime peel
- 1/2 tsp salt
- 8 chicken drumsticks
Directions
- To prepare marinade, combine all ingredients except chicken in a heavy zip-lock plastic bag. Add chicken and squeeze bag to coat chicken with marinade; seal bag. Let stand for 30 minutes.
- Preheat natural gas barbecue on low heat for 10 - 15 minutes. Remove chicken from marinade; discard marinade.
- Grill chicken until chicken is cooked through, about 40 - 45 minutes.
