Grilled Mahi Mahi with Fresh Pineapple Salsa

Mahi Mahi is a popular dense fish which makes it perfect for grilling and we kicked it up a notch by pairing it with a sweet and spicy pineapple salsa.

Grilled Mahi Mahi with Fresh Salsa

Ingredients

  • 1 1/4 cups diced fresh pineapple
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp sweetened flaked coconut
  • 2 tbsp fresh lime juice
  • 2 tsp finely chopped jalapeno pepper
  • 1 tsp pink peppercorns, crushed
  • 4 small or 2 large mahi mahi fillets
  • 1 tbsp salted butter, melted

Directions

  1. To prepare pineapple salsa, combine first 7 ingredients (pineapple through peppercorns).  
  2. Cover and refrigerate for up to 2 hours. 
  3. Brush mahi mahi with melted butter.  Grill mahi mahi over medium heat on natural gas barbecue for 10 - 12 minutes per inch of thickness or until fish flakes easily with a fork. 
  4. Serve with pineapple salsa.
