GRILLED SCALLOPS WITH GINGER LIME SAUCE

Scallops cook up wonderfully on the barbecue. We pair these juicy scallop skewers with a creamy fresh ginger and lime sauce. Serve them with rice and vegetables as a main or on their own as a special appetizer.

GRILLED SCALLOPS WITH GINGER LIME SAUCE

Ingredients

  • 8 - 10 bamboo skewers
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 2 tbsp finely chopped onion
  • 1 tsp grated fresh ginger
  • 1/4 tsp grated lime peel
  • 3/4 cup whipping cream
  • 1 1/2 lb (0.75 kg) large scallops
  • 1/4 cup salted butter, melted

Directions

  1. Soak bamboo skewers in hot water for 30 minutes.
  2. To prepare sauce, combine wine, broth, onion, ginger and lime peel in a frypan. Bring to a boil and boil until mixture is reduced by half. Stir in cream and continue to boil until mixture is reduced to 3/4 cup. Keep sauce warm.
  3. Preheat natural gas barbecue on medium for 10 - 15 minutes.
  4. To ensure scallops lie flat, thread them horizontally onto soaked skewers. Brush with melted butter. Grill scallops just until scallops are opaque, about 3 - 4 minutes per side. Do not overcook. Serve scallops arranged on top of a small pool of sauce.
