GRILLED STEAK WITH BLUE CHEESE CREAM

Blue cheese is the perfect accompaniment to a good quality steak. With this recipe we pair grilled rib-eye with a spicy blue cheese cream sauce.

Yield: Serves 4.

GRILLED STEAK WITH BLUE CHEESE CREAM

Ingredients

  • 1 cup crumbled blue cheese
  • 1/3 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • 4 rib-eye steaks, 1 inch thick
  • 1 tbsp extra-virgin olive oil

Directions

  1. To prepare blue cheese cream, place blue cheese, sour cream, mustard, Worcestershire sauce, paprika and cayenne pepper in a food processor; process until smooth. Cover and refrigerate for up to 2 days.
  2. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  3. Brush steaks with oil. Grill steaks to desired doneness. Serve with blue cheese cream.
