HERB ROASTED CAULIFLOWER WITH PARMESAN CHEESE

This oven-roasted cauliflower is seasoned with tarragon, thyme and garlic and sprinkled with Parmesan cheese. Serve it as a side dish at a sit-down family meal.

HERB ROASTED CAULIFLOWER WITH PARMESAN CHEESE

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp tarragon, crumbled
  • 1/2 tsp thyme, crumbled
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 3 cloves garlic, finely chopped
  • 8 cups cauliflower florets
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp fresh lemon juice
  • 1 tbsp chopped fresh parsley

Directions

  1. Preheat oven to 425°F. Grease a large rimmed baking sheet or line with non-stick foil.
  2. Combine oil, tarragon, thyme, salt, pepper and garlic in a large bowl. Add cauliflower and toss until coated. Place cauliflower in a single layer on prepared pan.
  3. Bake, uncovered, stirring occasionally, for 20 – 25 minutes or until cauliflower is tender and lightly browned.
  4. Add Parmesan cheese, lemon juice and parsley; stir until combined and cheese is melted.
