KALE SALAD WITH ORANGES AND SUNFLOWER SEEDS
Ingredients
1 pkg (5 oz/142 g) baby kale
2 cups thinly sliced kale
2 medium navel oranges, peeled, sectioned and chopped
1/4 cup crumbled soft goat cheese
1/4 cup diced red onion
1/4 cup sunflower seeds, toasted
2 tbsp fresh orange juice
2 tsp liquid honey
1 tsp balsamic vinegar
1 tsp sherry vinegar
1 tsp Dijon mustard
1 tsp grated orange peel
1 clove garlic, finely chopped
Pinch salt
1/4 cup canola oil
1 tbsp sunflower seeds, toasted and chopped
Directions
Combine baby kale, kale, oranges, cheese, red onion and 1/4 cup sunflower seeds in a bowl; set aside.
To prepare dressing, whisk together orange juice, honey, balsamic vinegar, sherry vinegar, mustard, orange peel, garlic and salt until combined. Gradually whisk in oil until blended. Stir in 1 tbsp chopped sunflower seeds.
Add dressing to kale mixture and toss to coat. Serve immediately.
