KOHLRABI AND BEET SALAD
Ingredients
- 3 tbsp canola oil
- 2 tbsp balsamic vinegar
- 1 tbsp liquid honey
- 1 1/2 tsp Dijon mustard
- 1/4 tsp salt
- 2 cups cubed peeled kohlrabi (1/4 inch)
- 2 cups cubed peeled golden yellow beets (1/4 inch)
- 1 1/3 cups cubed unpeeled nectarine (1/4 inch)
- 1/2 cup slivered almonds, toasted
- 1/2 cup crumbled feta cheese
- 1/4 cup slivered fresh mint
Directions
- To prepare dressing, whisk together oil, vinegar, honey, mustard and salt until blended.
- Combine kohlrabi, beets, nectarine, almonds, cheese and mint in a bowl.
- Add dressing and toss to combine.

Tip: Kohlrabi is a vegetable belonging to the turnip family. The flesh of its bulb-like stem is cream-coloured and has a taste similar to broccoli stem, but sweeter. Look for it at garden markets or in the produce section of grocery stores.
