KOHLRABI AND BEET SALAD

Kohlrabi is a gnarly-looking bulb-like vegetable that has a mild taste similar to broccoli stems, though slightly sweeter. This attractive salad combines uncooked kohlrabi with golden beets, mint, nectarines, almonds and feta.

KOHLRABI AND BEET SALAD

Ingredients

  • 3 tbsp canola oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp liquid honey
  • 1 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 2 cups cubed peeled kohlrabi (1/4 inch)
  • 2 cups cubed peeled golden yellow beets (1/4 inch)
  • 1 1/3 cups cubed unpeeled nectarine (1/4 inch)
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup slivered fresh mint

Directions

  1. To prepare dressing, whisk together oil, vinegar, honey, mustard and salt until blended.
  2. Combine kohlrabi, beets, nectarine, almonds, cheese and mint in a bowl.
  3. Add dressing and toss to combine.
