LEMONY NEW POTATOES

Boil new potatoes and dress them with lemon, butter and chives for an easy and delicious side dish.

Yield: Serves 4.

LEMONY NEW POTATOES

Ingredients

  • 2 lb (1 kg) new potatoes
  • 1/3 cup salted butter
  • 1 tsp grated lemon peel
  • 1 tbsp lemon juice
  • 2 tbsp minced chives
  • 1/2 tsp salt
  • 1/8 tsp pepper

Directions

  1. Scrub potatoes well; pare a band from the middle of each one.
  2. Place potatoes in a large saucepan; cover with water.
  3. Heat to boiling, cover and simmer 20 minutes or until tender.
  4. Drain, return to pan and shake over medium heat to dry.
  5. Melt butter; stir in lemon peel and juice. Pour over hot potatoes. Sprinkle with chives, salt and pepper; toss gently.
