Low Fat Citrus and Peppercorn Vinaigrette
This bright low-fat vinaigrette goes great on a variety of different salads.

Low Fat Citrus and Peppercorn Vinaigrette
Ingredients
- 1/2 cup grapefruit juice
- 2 tbsp lime juice
- 2 tbsp olive oil
- 2 tbsp chopped chives
- 1 tsp green peppercorns, rinsed and chopped
- 1/2 tsp grated lemon peel, optional
Directions
- Whisk together all ingredients. Serve over a mixed green or vegetable salad. Dressing may be kept refrigerated for up to 48 hours.
