LUNCHBOX ZUCCHINI BARS
These healthy snack bars are full of zucchini, wheat bran cereal, raisins and coconut, making them a great mid-day bite for kids and adults alike.

LUNCHBOX ZUCCHINI BARS
Ingredients
- 1/2 cup salted butter, melted
- 1/2 cup canola oil
- 1 1/2 cups brown sugar, packed
- 2 large eggs
- 2 tbsp water
- 1 tsp vanilla
- 1 1/2 cups wheat bran cereal
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 1/2 cups shredded zucchini
- 1 cup raisins
- 1 cup shredded coconut
Directions
- Preheat oven to 350°F.
- Whisk together butter, oil, brown sugar, eggs, water and vanilla in a bowl until blended. Stir in bran; let stand 5 minutes.
- Meanwhile, combine flour, whole wheat flour, baking soda, salt, cinnamon and nutmeg; set aside.
- Stir zucchini into bran mixture. Add zucchini mixture to flour mixture and stir just until blended. Stir in raisins and coconut.
- Spoon batter into a greased 9X13 inch pan.
- Bake for 45 minutes or until bars test done. Cool on a rack.
