MANDARIN SPINACH SALAD
Ingredients
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 2 tsp Dijon mustard
- 1/8 tsp salt
- 1/8 tsp freshly ground pepper
- 1 tbsp oil
- 6 cups baby spinach
- 1 can (10 oz/284 mL) mandarin oranges, drained
- 1/4 cup thinly sliced red onion
Directions
- To prepare dressing, whisk together vinegar, honey, mustard, salt and pepper until combined. Gradually whisk in oil until blended. Combine spinach, oranges and onion in a bowl. Add dressing and toss to coat.
