Mango Bellini
Made with just a few ingredients, such as mango, lime and champagne, this refreshing beverage is quick to make. Serve this elegant drink on special occasions, such as Mother’s Day or bridal showers.

Mango Bellini
Ingredients
- 1 ripe mango or 2 cups frozen mango
- 2 tbsp fresh lime juice
- 1/3 cup Simple Syrup (recipe follows)
- 2 cups champagne, chilled
Directions
- Halve mango and remove pit. Scoop out pulp with a spoon.
- Puree mango with lime juice and Simple Syrup. Transfer puree to a pitcher.
- Carefully stir in champagne. Pour into stemmed glasses and serve.

Simple Syrup
Ingredients
- 1 1/2 cups water
- 1 cup granulated sugar
Directions
- In a saucepan, bring water and sugar to a boil. Reduce heat and simmer for 5 minutes. Chill completely. May be refrigerated for up to 1 week.
