Mango Bellini

Made with just a few ingredients, such as mango, lime and champagne, this refreshing beverage is quick to make. Serve this elegant drink on special occasions, such as Mother’s Day or bridal showers.

Yield: Makes about 3 cups

Mango Bellini

Ingredients

  • 1 ripe mango or 2 cups frozen mango
  • 2 tbsp fresh lime juice
  • 1/3 cup Simple Syrup (recipe follows)
  • 2 cups champagne, chilled

Directions

  1. Halve mango and remove pit. Scoop out pulp with a spoon.
  2. Puree mango with lime juice and Simple Syrup. Transfer puree to a pitcher.
  3. Carefully stir in champagne. Pour into stemmed glasses and serve.

Simple Syrup

Ingredients

  • 1 1/2 cups water
  • 1 cup granulated sugar

Directions

  1. In a saucepan, bring water and sugar to a boil. Reduce heat and simmer for 5 minutes. Chill completely. May be refrigerated for up to 1 week.
