MANGO IN GINGER MINT SYRUP

Mango and mint are a magical combination. This sweet syrup is great on waffles or spooned over ice cream.

Yield: Serves 4.

MANGO IN GINGER MINT SYRUP

Ingredients

  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 tbsp grated fresh ginger
  • 1/3 cup packed fresh mint leaves
  • 1 large mango, peeled and sliced
  • Fresh mint sprigs*

Directions

  1. Combine water, sugar and ginger in a small saucepan. Bring to a boil.
  2. Reduce heat and simmer 5 minutes. Remove from heat and stir in mint leaves.
  3. Let stand 5 minutes. Strain mixture through a sieve. Discard solids.
  4. Allow syrup to cool completely. Combine mango and syrup. Chill 30 minutes. Garnish with mint sprigs.

Tip: Mango in Ginger Mint Syrup may be frozen for up to 6 weeks. If desired, the syrup may be frozen separately.
