This versatile recipe can be used as a crunchy and chewy topping to go with yogurt or as an easy and nutritious grab-and-go-snack.

MAPLE MUESLI WITH DRIED FRUIT
Ingredients
- 2 1/2 cups old-fashioned large flake oats
- 1/4 cup slivered almonds
- 1/4 cup unsalted sunflower seeds
- 1/4 cup unsalted shelled pumpkin seeds
- 1/4 cup hemp hearts (shelled hemp seeds)
- 1/4 cup flaxseed, coarsely ground
- 1/2 cup unsweetened coconut flakes
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1 tsp maple extract or vanilla
- 1/4 cup chopped dried apricots
- 1/4 cup raisins
- 1/2 cup chopped dried pitted dates
Directions
- Preheat oven to 375°F.
- Combine all ingredients except dried fruit in a large bowl. Toss to coat.
- Spread oat mixture on a parchment paper-lined baking sheet. Bake, stirring occasionally, until golden brown, about 18 – 20 minutes.
- Remove from oven. Top with dried fruit. Stir to combine. Cool to room temperature and transfer to an airtight container. Serve with yogurt or milk.
